Well, Nezuko first remembered her family's murders and was angry because of it. Then when Tanjiro sang her their Mother's lullaby and she had that memory form when she was little, I think she realised that they were dead then. Her anger was gone, and she associated what she had remembered of the attack on her family with their being dead.
She remembered them getting hurt, but it was never stated if Nezuko at that point even had the cognitive ability to realize that they died from the attack.
Both Tengen and Tanjiro came up with the same conclusion that she was simply too angry and hurt to sleep, and Tanjiro never smelled any grief coming from her during and after she had lost control. Tanjiro of all people would have realized that Nezuko found out their family was gone and then done more to comfort her about that. Instead, he simply apologized for getting her hurt and just never addressed it when she finally calmed down.
The fact that Takeo and Rokuta were excluded from her memories of that attack at first but then it was puzzled in later when she was remembering everything while turning back into a human, and she never showed any moments of her missing the family she supposedly realized she had lost, and she emphasized acknowledging that her family was dead when she finished becoming human again all seem to imply demon Nezuko just never fully figured it out.
